Hoppy Easter || Living with the Linger-Hunts || Personal

If you have been following us on our Instagram,  you know that we are brand new homeowners trying to navigate the sea of boxes that what was overwhelming our new space. We have found over the years that we work best under pressure, so we decided to announce that we would host Easter Dinner for both of our families. Having this specific unmovable deadline made the unpacking process kick in to high gear, and luckily, even though our home isn't complete, it was livable enough to host everyone. We even got a surprise visit from Christie's brother Kevin who made the trip in all the way from Indiana. Check out our minimal decor and table settings, plus some cute family moments below...

Now... On to the menu. We decided we wanted to have a variety of different vegetables since we were catering to so many different pallets. All of the recipes we decided on were new to us, and covered a range of flavors. Plus, they complimented the ham so well! Here is what we served:

-Brown Sugar Honey Ham

-Honey Balsamic Brussel Sprouts

-Garlic  Parmesan Green Beans

-Italian Herb & Honey Carrots 

-Mashed Potatoes & Gravy

-Baked Macaroni & Cheese

-Chicken Stuffing

-Baked Beans

-Chocolate Cupcakes with Homemade Buttercream Icing

The biggest hit was the Brussel Sprouts. We have never heard Summer's Grandpa rave so much about anything at a holiday meal. Below, you will find the super awesome, super easy recipe:

Honey Balsamic Brussel Sprouts:

1 1/2 lbs Brussel Sprouts

3 tbs  of Olive Oil

3/4 tsp Kosher Salt 

-Pepper to taste

2 tbs Balsamic Vinegar 

2 tsp Honey

-Preheat oven to 425 Degrees

-Line baking sheet with foil

-Prepare the sprouts by removing any dry or dead leaves, cut off bottoms, and cut length wise

-In large bowl toss Oil, Salt, and Pepper

-Transfer to baking sheet

-Roast until tender and caramelized (about 20 minutes)

-Pull out of oven

-Combine tbs of Olive Oil, Balsamic Vinegar, and Honey

-Toss until coated evenly

-Enjoy! We doubled the recipe and it turned out great. We had enough for all nine people and a little for left overs.
